Madam Zucchini's
Zucchinni Bread Recipe
Freezes Well


  • 2 cups granulated sugar
  • 1 cup oil
  • 3 eggs
  • 3 tsp. vanilla
  • 2 cups grated raw zucchini
  • 1/4 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 3 cups flour
  • 1/2 cup nuts (optional)


  1. In a small bowl, mix 1/2 tsp. cinnamon with 1/3 cup sugar and set aside.
  2. In a large bowl, mix together the remaining sugar, eggs, oil, and vanilla. Stir in the grated zucchini.
  3. Sift all remaining ingredients into the above mixture. Fold in the nuts.
  4. Preheat the oven to 350 degrees F.
  5. Butter sides and bottom of two 5 by 9 inch loaf pans.
  6. Use 1 - 1/2 Tbs. of cinnamon-sugar mixture to coat sides and bottom of each pan.
  7. Divide the batter equally between the loaf pans.
  8. Sprinkle a mixture of cinnamon and sugar on the top.
  9. Bake for 45 minutes to an hour. Check for doneness at 45 minutes and bake until a wooden pick inserted in to the center comes out clean.
  10. Cool in pans for about 10 minutes, then turn out onto wire racks to cool thoroughly.
